I am a Dubai based expatriate who can’t cook to save my life.  Cooking makes me anxious and stresses me out (really!).  After going through the embarrassment of hosting parties with my husband cooking all the courses (my contribution — I did the grocery shopping and got everything on the list!), we both thought that it might do us good if I took up baking.

Lo and behold, I started to love baking and baking seemed to love me.  While I’ve had cooking disasters, I’ve never had a baking disaster since I took it up in 2007.  It is probably because I am a left brain dominant person and baking is more exact than cooking.  However, as it has always been my aim to have a good balance between my right and left brain, I try to exercise my creativity through cake/cupcake/dessert decorating.

My modus operandi — first and foremost, come up with a great tasting recipe for a certain dessert.  I try to find my base recipe (either from the web, cookbooks, friends, etc) and make adjustments or modify them after subjecting people I know to a taste test.  Once that’s done, I explore ways of decorating the dessert.  While I’ve done Wilton courses, that does not necessarily mean that I feature it in everything I do.

I try new recipes every few weeks and this seems to interest a number of people.  I’m being asked more regularly, if I baked anything recently, am I doing a taste test soon and can I send pictures.  This has prompted my husband to encourage me to start a blog (to the extent that he registered me with wordpress) and so I have.  Aside from that, this is for my family and friends who never imagined that I would take up baking and who still don’t believe it until now!

Quiams….if I didn’t get to actually eat one (or more) of your baked creations back in June before reading this blog of yours; then I would thought to myself….hmmm si Lorelie, mag-bake? keep it up and hopefully I get to taste some more as you progressively excel at it….daghang salamat and just remember…I would love to be your guinea pig when you’re here in the States.
